I was tired of eating baked potatoes the old fashioned way with gobs of butter, so I created this simple recipe to put a little twist on them. My family and friends love them and I hope you do too.
These are roasted potatoes at their best – plain and simple. Red potatoes are tossed with olive oil, and salt and pepper, and then roasted to perfection.
Sliced potatoes, green peppers, onions, and a dab of butter are sealed in aluminum foil and tossed onto the grill. When the veggies are piping hot and tender, sprinkle with Cheddar cheese and serve.
Potatoes are baked and then hollowed out. The flesh is combined with sour cream, milk, butter, green onions and Cheddar cheese, then topped with more cheese, green onions and bacon.
